The other day was peanut butter cookie day. Personally, I think every day should be peanut butter cookie day. Peanut butter cookies are SO good. I decided that as the awesome intern I am, I was going to make peanut butter cookies for my coworkers. Make them not want to get rid of me. ūüôā

Because I am me, I didn’t want to just make plain peanut butter cookies. So I used this peanut butter cookie recipe and just tweaked it a bit.

I was pretty excited¬†because it gave me a reason to wear my new flirty apron. Isn’t it totally adorable? I felt like my Mimi. Which is totally ok, because my Mimi was an amazing woman.

And here is a picture of me in total heaven while I eat some of the dough. I don’t need people in my life who tell me I can’t eat raw cookie dough. That’s the only reason to even make your own cookies.

Couple of little cooking tips:

You can substitute baking soda for baking powder. But make sure that for each 1t of soda, you use 4t of powder. I know this because as I was pulling things out to bake, I realized I used all the baking soda to make a salve (that ended up feeling like lava it stung so bad) my poison ivy. That is why you see a large amount of baking powder.

The easiest and quickest way to soften butter is in the microwave.¬†When I googled “quickly soften butter” most the answers were either making a double boiler or leaving it out all day. Well, I’m lazy, and I really didn’t want to heat the house up any more than I needed to, so there goes the double boiler. And it was like 7pm, I didn’t have all day to leave butter out. I put two sticks of butter in the microwave, set it for 30 seconds, and it worked great. There was a tiny bit of melting, but otherwise, they were just soft sticks of butter.

These are a double batch¬†because I wanted to make them small and make a whole heck of a lot of them. I’m not proud to say I helped contribute¬†quite a lot to making them disappear within 24 hours.

Peanut Butter Cookie Goodness

Yields about 3 dozen cookies.


1 1/2c Sugar                                                               4c Flour

1c Brown Sugar                                                         4t Baking Powder

1c Softened Butter                                                    1 1/2c Smashed Favorite Nuts (I used walnuts)

2 Eggs

2C Peanut Butter (Or 1 16 ounce jar)

2T Milk

2t Vanilla


Preheat oven to 350 degrees.

Either line cookie sheets with parchment paper or spray with cooking spray.

In a big bowl, mix butter and sugars.

Add in egg and peanut butter, mix well.

Mix in milk and vanilla.

Pour in flour and baking powder. It shouldn’t be very running. If it is, add more flour.

Finally, add in nuts. You will have to mix them pretty good to get them incorporated instead of just sitting on the button.

Roll balls about a half inch.

Place balls on a cookie sheet and then make the X’s with a fork.

Bake for about 10 minutes. They will look like of underdone. Let them sit on the pan for two minutes before removing them to a cooling rack.
