Maple Blondie Cupcakes Recipe
You may remember my copycat Blonde Brownie recipe. I was seriously craving some blonde brownies. But it wasn’t looking like I was gonna get the chance to go to Applebees to get some. We had Ella, and she was ready to be home and playing. So, I had to improvise. I really didn’t want to wait the time for brownies, plus Ella mentioned she wanted cupcakes.
I basically made these brownies but poured them into cupcake pans.
Since I wasn’t about to pour maple syrup over my brownies (although I was tempted), I had to make a frosting. It was seriously simple. I just got a ready made cream cheese frosting out and whipped it up in my Kitchenaid. Then I added syrup. And more syrup. And more, more, more. I honestly can’t tell you how much I squeezed in. So when you make it, do it to taste.
Because we are an impatient family, we didn’t let the icing harden before eating them. Which is totally ok, because it still tastes delicious. We had some left over (shocker) and the next day the icing was hard and still yummy.
You can already see how messy they are.
We had SO much fun eating these. I think we each of use ate two. It was SO hard to stop eating them.
The frosting got EVERYWHERE! It was so messy, but so worth it. Even my mom and dad got messy!
I highly recommend eating these with a big glass of milk handy. Seriously, I can’t stress enough how delicious these are. Even if you just make the brownies instead of cupcakes, I recommend putting this frosting on them. You can’t go wrong!
