Banana Cinnamon Streusel Bread

I always seem to have a problem with finishing off a thing of bananas. I only like them right before they ripen, where they still have a pretty good amount of green left. I think it is the texture that I like the best about under ripe bananas. After they hit all yellow, I almost never eat them. Which means I have about 2 days to eat like six bananas. Yeah, never happens.

So unless someone else eats them, the leftover bananas tend to just sit there and turn brown. I hate to waste perfectly good bananas, so I try to make something with them (banana milkshakes are the best.) This time I created a very delicious banana cinnamon streusel bread. I usually fail at making bread because I can never seem to cook it all the way through. But this time… wow. Perfection.

I will admit, I went a tad overboard with the streusel topping. But that is my favorite part.


Banana Cinnamon Streusel Bread

1 c sugar

3/4 c brown sugar

1/2 c butter

2 eggs

2 way over ripe bananas

4 t baking powder

1 t salt

3 1/2 c SIFTED flour

Preheat oven to 350 degrees F.

Mix sugar, brown sugar, and butter in a bowl until they are completely combined. Add in eggs and mix well. Cut the bananas into smaller chunks and squish them into the mix. Using a Kitchenaid here makes it 100x easier.

Add in 4t of baking powder and 1t salt. In a separate bowl, measure out 3 1/2 c sifted flour. Make sure it is sifted, as it makes all the difference. Then slowly add flour into the wet mix, stirring slowly so you don’t make a huge mess.

Pour batter into a regular sized loaf pan. Sprinkle streusel all over the top of the batter. If you make as much as I did, the entire top will be covered.

Bake for about 1 hour or until toothpick comes out clean. Serve and enjoy!

Streusel Topping

3 heaping T of sugar

3 heaping T of flour

1 t cinnamon

1 heaping T of butter

Mix all the ingredients together. It should be the consistency of wet sand.
