Cookie Butter No Bakes
I got bored the other night. I was also kind of hungry. Browsing Pinterest only made me hungrier. Browsing Pinterest while you are hungry is almost the same as grocery shopping hungry.
Pinterest led me to Healthy No Bake Cookies. I didn’t have half of the ingredients, so I decided to tweak the recipe. In honor of national gingersnap day, I decided to use cookie butter. If you have never had cookie butter, it has a gingersnap/gingerbread taste. These no bakes are definitely no longer healthy.
What you need:
1 C Cookie Butter
1/3 C Peanut Butter
2/3 C Honey
1/2 C Butter
1/2 C Cocoa Powder
Dash of Vanilla
3 Cups Rolled Oats
Melt cookie butter, peanut butter, honey, and butter in a medium sauce pan. Once melted, add cocoa. Bring to a rolling boil and let boil for about a minute. Stir constantly! Otherwise it will burn.
Remove from heat. Add in vanilla. I just dumped some in without measuring. Add oatmeal, slowly adding, then mixing, then adding.
Once well mixed, pour into a pan. I lined my pan, but you don’t have to. The smaller the pan, the thicker the bars! Wait 3-4 hours for the bars to set up. I left mine to sit all night, considering it was almost one am when I finished. 🙂
